Duck Fat Roast Potatoes

Duck fat roast potatoes at Christmas. Nigella would be proud of us! They are the best roast potatoes we've ever had, and once you know the secret you'll be able to roast the best potatoes anywhere, anytime! It might sound silly to fall this in love with a recipe but they are a classic, and using good quality ingredients will yield the best results and they really are “a moment” ...just watch your guests try and resist seconds and thirds!

Ingredients

  • Dutch Cream potatoes (or your favourite roasting potato variety)
  • Duck fat
  • Good quality salt

 

Method

  1. Preheat the oven to 200°C. 
  2. Place the duck fat in a roasting pan, then place in the oven to heat
  3. Place the whole potatoes in a saucepan of cold salted water and bring to the boil.
  4. Reduce heat to medium and cook for 10 to 15 minutes or until par-boiled.
  5. Drain, then place on chopping board to cut and squash. 

  6. Remove duck fat from oven
  7. Carefully add potato to duck fat and gently toss to coat.
  8. Sprinkle with salt.
  9. Return to the oven and roast, turning regularly, for 45 minutes or until golden and crisp.
  10. Sprinkle with salt and serve.
If you see a mark like this inside of a dutch cream potato, this is to do with an extreme change of temperature or moisture conditions during the lifespan of the potato growing. You can easily cut the mark out and cook with the potato.
